The Head Chef, also an award winner, offers a fresh take on traditional Scottish favourites. Guests will dine from a menu that changes daily and offers plenty of fresh, local, seasonal produce. Sample starters include terrine of confit chicken, glazed baby onions, sweetcorn puree and toasted rye bread, and roulade of smoked salmon with cream cheese, crisp salad and lemon & chive sauce.

Sample mains include slow-roasted loin of pork with braised red cabbage, black pudding fritter, herb mash and apple cider jus; pan-seared sea bass, buttered leeks, sautéed potatoes and Chardonnay cream, and venison & haggis casserole with almondine potatoes and honey-glazed carrot. Regular menu items include freshly caught haddock with triple-cooked chips, Chef’s Fairfield Tower Burger and a wide range of steaks.
